The Conservatory is like ‘Bangalore on a Rooftop’

An ode to Lalbagh, food and friends is how we described the Conservatory on the first invites that went out. We inhabit a space not more than 700 meters away from Lalbagh and we are canopied by a 100-year-old vintage Bangalore Raintree. The architecture of the space just had to speak of this inherited horticulture heritage of the city. A distillation of ‘Bangalore on a Rooftop’ as the setting for food experiences, with friends and family, is the cornerstone of our culinary experiment.

An ode to Lalbagh, food and friends is how we described the Conservatory on the first invites that went out. We inhabit a space not more than 700 meters away from Lalbagh and we are canopied by a 100-year-old vintage Bangalore Raintree. The architecture of the space just had to speak of this inherited horticulture heritage of the city. A distillation of ‘Bangalore on a Rooftop’ as the setting for food experiences, with friends and family, is the cornerstone of our culinary experiment.  

Geographically suited to be this melting pot for Indians and contemporary ideas and companies. technology and more. This has probably given rise to Bangalore’s ‘cultural person’. Eager to explore, try, be curious and willing to pay well for it. We, therefore, tried to create a ‘No Rules Play Ground’ for food experiences in the city. This cultural person we soon realised was also tremendously ‘food curious’.  

Chefs and makers were looking for new ways to express themselves. Buoyed by the pandemic to find deeper purposes to our endeavours (chefs) and experiences (diners) the Conservatory embodied this convergence. We often tell the chefs to not worry about a ‘failure’ of a meal. We aim to make sure it pushed some boundaries.  

We usually try to maintain a mix of chefs and creators from out-of-town and local talent. From having Chef Harsh, The Bombay Canteen, Sapa, Mizu and Chef Vignesh Ramachandran, we have visiting chefs once a month at least. With our Bangalore chefs, we try to create concepts that can be long-term associations and standalone properties, like the High Tea, The Grub (take on pub food), Tapas nights etc. We will soon be adding workshops, classes, a cookbook club and more at The Conservatory. 

The consumer, we now realise is looking at us for breakthrough food events, new chefs and newer experiences in the city. This community is quite a remarkable one. In the days to come, we hope the Conservatory helps steer conversations and experiences around food in more meaningful directions with passion, irreverence and integrity. And keep its community at the heart of everything!

The Conservatory has a great team of youngsters working with them. Aryaman heads the Conservatory, handling its programming and operations. A culinary graduate himself he is incredibly passionate about the city's craft F&B scene.
